Cornbread Cupcakes

How to make this delicious cornbread cupcake.



  • 2 cups sweet corn
  • ½ cup almond milk
  • ½ cup Stevia or erythritol 
  • ½ cup corn flour
  • 2 eggs
  • 1 tsp baking powder
  • ½ cup mozzarella cheese, almond cheese or another of preference


  • Preheat the oven at 350F
  • Mix the corn and the milk in a blender for 10 seconds.
  • Add the rest of the ingredients to the blender and mix for 20-30 seconds. The mixture should be thick.
  • Pour the mixture in a cupcake pan and take it into the oven for 30 minutes.
  • When it is ready, let it cool and add some cheese on top.
